1Wet brining meat is a great way to add flavour and increase juicyness of any meat. You can wet brine any meat but it works best for meat you plan to dry roast, grill or BBQ. You can add sugar to the brine but for most meats this will cause the outside to burn before it gets crispy. This means sugar is best only used for things like ham.

2Take your meat and put it in a glass or plastic container with a lid . Put enough water into the container to completely cover the meat.meat, water

3Pour the water out and weigh it. Warm the water in a pan and add 5g of salt per 100g of water (5%) and (if using sugar) 1g of sugar per 100g (1%). Add any spices you want to the water.salt, sugar, spices

4Once fully dissolved pour the brine into the container with your meat.

5You can store the meat in the refrigerator for upto 1 week before use or in the freezer indefinitly.
